Majordomo Meat & Fish
This was one of our first stops in Las Vegas, getting in close to 10pm and catching a bit of a break with seating. It sat inside the Venetian, tucked into the Grand Canal Shoppes area, which already set a different tone from the rest of the Strip. It felt more removed, a bit quieter, and more intentional compared to the chaos outside.
The restaurant itself leaned big and open, with a dining room that felt designed for groups and shared meals. Seating was spacious, and the whole place carried a darker, slightly moody feel that made photos tough. I remember having to apologize for how dark everything came out. Service matched the setting, steady and polished, but still relaxed enough to let the meal unfold naturally.
The food followed that familiar David Chang style, bold, rich, and built around sharing. However, it felt like it catered to the more general crowd, offering staple dishes you find around the strip. Don’t get me wrong, I knew that coming in and in fact, I wanted to try it. See what we selected below. Having been to his restaurants, this one held up and did not disappoint. It carried the same identity but stretched into something that fit Vegas steakhouses.

Verdict: I would rather go back to David Chang’s Momofuku.
Update: Looking back, it is one of those places I am glad I made it to before it closed. The restaurant opened in 2019 inside the Venetian and shut down in June 2022, which made the experience feel a bit more like catching something at the right time.

This was the wagyu from Robbins Island cooked to a medium rare with roasted garlic on the side. As you can guess, the video turned out better than the photo. So here you have it, one of our favorite dishes of the night.

Miso charred cod with a side of bok choy, sliced mandarins, and ginger. We would have loved this more if it wasn’t a bit over cooked. The meat was a bit on the drier side.

They had me at truffle XO sauce. Usually the traditional high class Asian dish would be green beans in XO sauce. However, here it was truffle XO. Over the top but not bad.
